I got this recipe from my father in law’s girlfriend, she is a personal trainer and makes the most incredible healthy food ever! Everytime we go to visit, i end up leaving in a food coma! This recipe is high in fibre, healthy & only gets better as the veg and beans soak up the juices in the fridge! Even better, my kids love this recipe!
1/2 olive oil
1/2 red wine vinegar
1/2 teaspoon cumin
1/2 teaspoon chilli powder
2 tabelespoons sugar (we use cocont sugar)
2 tablespoons lime
1-2tablespoons (i play around with taste as i loveee lemon!)
Salt & Pepper to taste.
1 clove garlic crushed
1 tiny dash of hot pepper sauce
1 can black beans rinsed and drained
1 can kidney beans rinsed and drained
1 can white kidney beans rinsed and drained
1 red onion, diced up into small pieces.
1 red pepper
1 yellow pepper
1/4 cup fresh cilantro
5-6 stalks of celery. I love celery so i put in as much as possible,you can add as much as youd like.
Feta – we love feta! Add as much as you please! It really finishes of this recipe well!
In a small bowl, combine all of the dressing ingredients. In large bowl, combine your beans & veg, pour the dressing over top, add feta and voila! Let set in fridge overnight for the best taste!
